This is gorgeously refined and elegant with white flesh nectarine, crunchy apple and lime zest aromas, delivering terrific fruit purity and finely textured mouthfeel. Youthfully charming with a potential to evolve gracefully. At its best: 2025 to 2036.

Restrained nose, with gentle aromatics of lively candied lemon peel and a saline touch, some lime blossom, and apples underneath. Delicate palate, perfumed with a mouth-watering acidity balanced by a creamy texture.

Beautifully pristine and pure Riesling showing all that is great about the 2021 vintage. Very pale in colour and piercing yet elegant aromas of white flowers and citrus with a burst of exotic tangerine peel and spice – fantastic to see a young Clare Riesling with such exceptional personality. Bone dry with superb palate density and fruit concentration, it is a picture of fruit precision and focus with juicy acidity well integrated and driving a long and fine finish. Benchmark Clare Valley Riesling.

A nose of candied lime with fresh citrus blossom. The floral thread continues on the palate with a litheness of citrus acidity that is so beautifully integrated with lime and understated tropical fruits. There is a chalkiness of texture with slate and wet rock lifting citrus fruits to finish. Drink 2022 - 2040

Vintage Notes
Growing Season
The 2021 vintage conditions for Gaelic Cemetery Vineyards were cool and dry producing average yields for all varieties including Shiraz. An even budburst through spring and good fruit set were an ideal start to the growing season. Dry conditions continued over the summer period with a very hot and windy day on January 24 causing some vine stress. Despite these challenges, the Shiraz maintained good varietal character and balanced ripening.
Winemaking
The Shiraz for this wine was harvested on February 25th and 26th, 2021. The grapes were machine picked in the cool early morning, then transported to the winery where they were destemmed into small open-top fermenters. After a 72-hour cold soak, fermentation began naturally with indigenous yeasts. The ferments were carefully managed with gentle pump-overs to extract color and flavor while maintaining elegance. After 12-14 days on skins, the wine was pressed and transferred to a selection of new and used French oak barrels for 18 months of maturation. The final wine showcases excellent color and richness at moderate alcohol levels, typical of the 2021 vintage.
